February's Recipe- Fruit and Nut Loaf


Submitted by Gloria.This Fruit and Nut Loaf  is so nice with a cup of tea or coffee. Even though it is low fat, it is moist. a If you like dried fruit and you like nuts you will love this recipe. My friend Robin, who also intruduced me to quilting, adapted a recipe from one of the Best of Bridge cookbooks. and was kind enough to share it with us. Here it is. 

Ingredients:

1 cup chopped dried apricots
1 cup water
1 large orange - rind and juice
2 Tbsp. Margarine or Butter
1 cup sugar
2 eggs, beaten
1 tsp. vanilla
2 cups flour
2 Tbsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 cup dried cranberries
1 cup chopped pecans

Method:

Add water to apricots and let stand overnight. Drain liquid and reserve. Add orange juice to apricot liquid and then add enough water to make one cup.Cream shortening, grated orange rind and sugar. Add beaten eggs and vanilla. Sift dry ingredients and add alternately with the one cup of liquid. Mix in apricots,
cranberries and chopped pecans. Pour into 6" x 10" greased loaf pan. Bake at 350 degrees for 60 to 70 minutes.
