Chocolate Chip Cookies-recipe from Gloria


This is a recipe that my mother made frequently. They can be made crispy or soft, just with a couple of minor adjustments. This recipe has no eggs. 

Ingredients:

1 cup soft margarine (for soft cookies) or  1 cup butter room temperature (for crispy cookies)
3/4 cup packed golden brown sugar
1/4 cup white sugar
1 tsp. vanilla
1 1/2 cup flour
1/2 tsp. salt
1 tsp. baking soda
1/4 cup boiling water
2 cups quick rolled oats
1/2 cup chopped walnuts
1 cup semi sweet chocolate chips

Beat margarine, sugars and vanilla until light and fluffy.  Add flour and salt; mix well. Dissolve baking soda in boiling water; add to flour misture. Stir in rolled oats, nuts and chocolate chips. Place by spoonful onto greased cookie sheet. For soft cookies flatten each cookie with a fork dipped in cold water. For crispy cookies do not dip the fork in water, just flatten them slightly. Use your fingers to fix the edges if they are not very round when you press them down with the fork. Bake at 350 degrees F for 8-10 minutes. Leave on cookie sheet for two to three minutes after you take them out of the oven and then transfer them onto a wire rack to cool.

Makes about 4 dozen cookies. (fairly small)
