Monster Cookies

This is the recipe for the cookies that Debbie Wickstrom brought to our last meeting.

I am not sure if they are called monster cookies because they are supposed to be large cookies, or because it is such a large recipe. Believe it or not. Debbie has cut this recipe in half... Or maybe this is the type of cookie that the cookie monster eats!

If you buy the gluten free type of oatmeal, this is a great gluten free recipe! (Regular oatmeal has traces of gluten in it.) I made these cookies to take to my co-workers on Halloween. I used Reeses Pieces baking candies because they looked more suitable for Halloween.  They were a hit! I made them very big. When baking them I took them out of the oven when they looked just barely dry. I left them on the pan for about 4 minutes after baking. and then carefully slid them onto a rack to cool. They stayed soft and chewy. If you want them crispy, make them a bit smaller and bake them a bit longer.

Debbie's grand children love these, but they cannot take them to school for a snack because there is peanut butter in them.
Ingredients: 
3 cups of peanut butter
1 cup soft butter 
3 cups packed brown sugar 
2 cups granulated sugar 
6 eggs, 1/2 tbsp. of vanilla 
1/2 tbsp. of corn syrup ( optional) 
9 cups quick rolled oats
4 tsp. baking soda 
1 cups semi sweet chocolate chips 
1 cup chocolate M&Ms

Method: In a very large mixing bowl, cream butters, and sugars together, add eggs, Mix in vanilla and syrup. Add dry ingredients to the wet ones. Drop onto greased cookie sheet ( I never grease mine). Bake at 350 for 10-12 minutes. Makes a huge amount of cookies! YUM YUM!
