Creme Caramel

This can be made in individual ramekins or in one round dish. If you have a metal cake pan with a solid bottom this is ideal. (not a springform pan)

Ingredients:
1 1/2 cups sugar
2 cups of milk (or 1 cup of half and half and one cup milk)
4 eggs
1/3 cup of sugar
1 Tbsp vanilla

Method:
Put 1 1/2 cups sugar in a pot and heat it over medium heat until it melts. Stir constanly, don't leave it!
Put in the pan or individual serving dishes and swirl until bottom of dish is covered.
Heat the milk or milk mixed with cream until hot. Remove from heat.
Wisk together 4 eggs, 1/3 cup sugar, 1 Tblsp vanilla.
Slowly pour the hot milk into the egg/sugar mix while whisking.
Pour through a strainer over the melted sugar.
Put in a water bath.
Bake at 350 degrees F for 30 minutes.
Let cool.
Dump the dish upside down onto a plate before eating. Do this by putting the plate on top of the pan and then flipping them both over at the same time. Slowly lift up the pan from the plate.
