Chocolate Chip Cookies - Submitted by Faith

Ingredients:
2-1/2 C oatmeal (quick cook or large flake)
2 C flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 C margarine or butter
1 C brown sugar
1 C white sugar
2 eggs
1 tsp vanilla
2 C chocolate chips

Beat margarine well.  Add brown sugar and beat well.  Add white sugar and beat well.  Add eggs and vanilla and beat well.

In a food processor process oats, flour, baking soda, baking powder and salt until fine.  Add dry ingredients to egg mix in 2-3 additions.  Mix well.  Add chocolate chips.  Drop by spoonful (approx golf ball size) onto baking sheets.

Bake at 375 degrees for 12-15 min.  Do not overbake.  Cookie will still appear moist on top and brown on edges.  Cool.

Note:  I usually add 1C chopped walnuts to my version.
