Almond Crisps

These are sweet nutty treats. They are not really cookies. They are thin and crispy. You will need a kitchen scale to me this recipe.  I bought liquid egg whites in a carton which I think was probably a smart thing to do. It may be tricky getting the right amount of egg whites if you just start cracking open eggs.

Put one container on the scale for weighing things in and then once you have the right amount dump it over into the mixing bowl. (Don't forget to zero the scale after you put the empty container on it.)

Ingredients:
200 g sliced almonds
100 g white sugar
30 g all purpose flour
100 g egg whites
40 g cooking oil

Method:
Preheat oven to 400 degrees F.
Line a baking sheet with parchment paper.
Mix all ingredients together in a bowl.
Drop round spoonfuls onto the parchment paper.
With clean hands use your fingers to flatten them out so that the almonds are only one layer thick.
Bake in the oven for 10 minutes. Watch them carefully. If they are browning faster on one side rotate the pan as necessary for even browning.
